Goat Cheese Crackers

Always looking for a new or differnet appetizer, I made this knowing I could use any one of the great flavors available from JFF. One basic recipe with endless possiblities!

Serves: makes about 30 crackers


Ingredients
1 stick butter, softened
1 4 oz Goat Cheese (Chevre) softened
1 1/2 cup unbleached all-purpose flour
3/4 tsp kosher salt
2-3 tbsp water
1 egg, beaten
optional 1/4 c sesame seed
1/4 c poppy seeds
1/4 c toasted, chopped walnuts

Step by Step Instructions
  1. In a large mixing bowl, cream butter and cheese. Scrap down sides of bowl.
  2. Combine flour and salt, with machine on low, slowly add dry into cheese mixture.
  3. As the dough starts to form, add 1 tbs of water at a time, just to combine.
  4. Pour dough onto counter and knead, just to bring together. Divide in half. Roll each half into an 8" log.
  5. Brush with egg wash, and roll sesame seed or option of choice,wrap in wax paper and refrigerate for at least 30 minutes, or overnight.
  6. When ready to bake, preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  7. Slice logs into 1/4"-1/2" slices. Place on baking sheets. Bake for 25-30 minutes, flipping over about half way through, for even browning. Remove from tray to a cooling rack. Allow to cool completely. Enjoy with a topping of choice, or with soup, salad or just to nibble on!
