Serves: makes about 30 crackers
Ingredients

butter, softened
1 4 oz
Goat Cheese (Chevre) softened
1 1/2 cup
unbleached all-purpose flour
3/4 tsp
kosher salt
2-3 tbsp
water
1
egg, beaten
optional 1/4 c
sesame seed
1/4 c
poppy seeds
1/4 c
toasted, chopped walnuts
Step by Step Instructions
- In a large mixing bowl, cream butter and cheese. Scrap down sides of bowl.
- Combine flour and salt, with machine on low, slowly add dry into cheese mixture.
- As the dough starts to form, add 1 tbs of water at a time, just to combine.
- Pour dough onto counter and knead, just to bring together. Divide in half. Roll each half into an 8" log.
- Brush with egg wash, and roll sesame seed or option of choice, wrap in wax paper and refrigerate for at least 30 minutes, or overnight.
- When ready to bake, preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
- Slice logs into 1/4"-1/2" slices. Place on baking sheets. Bake for 25-30 minutes, flipping over about half way through, for even browning. Remove from tray to a cooling rack. Allow to cool completely. Enjoy with a topping of choice, or with soup, salad or just to nibble on!
